Senna and 1 are both good movies.
Also, I just found this 20 minute documentary on my local SCCA chapter, it's pretty cool.

While not, strictly speaking, a documentary, James May's Cars of the People is excellent. There are several episodes, and, unlike Top Gear, it is quite informative. A lot of history.

Black Air is a documentary on the Buick grand national, good insight on the car.
